Vegan Gluten Free Beetburger
I couldn't believe it was so easy to do! And it tastes so good!
You can vary the recipe depending on leftovers, personal taste for spices, and dietary preferences.
Below, see how I made my beetburger.
Vegan Gluten Free Beetburger Recipe
Serves 4, Makes 4 Patties
Ingredients:
- 1 cup of shredded beetroots
- 1 cup of cooked chickpeas (or lentils, black beans, red lentils..)
- 1/2 chopped onion
- 2 cloves of garlic, minced
- 1/2 tsp paprika + 1/2 tsp cumin + 1/2 smoked paprika (optional)
- Salt, pepper, 1 TBSP extra virgin olive oil
Method:
Heat a bit of olive oil in a non-stick pan, add onion and sauté a few minutes. Let them cool down.
Place all ingredients, including onion, in a high speed blender and pulse a few times to obtain a rough mash, better to leave a bit of texture.
Form 4 burgers and set in the fridge at least half an hour.
Again, heat a bit of olive oil in a non-stick pan, place your burgers in and cook each side for 4-5 minutes (flip over gently).
Serve hot with GF bread or your favourite bun, topping with a hint of mustard, ketchup or hummus; Try also with whole brown rice or quinoa.. whatever you like!

What to do with the beet green tops? They are delicious sautéed with garlic and extra virgin olive oil along with some pack choi or another green leaf you may have :)
