Stuffed Zucchini
Ingredients:
4 large zucchini halved lenghtwiste
2/3 cup panko bredcrumbs
1/2 cup fresh grated parmesan cheese
1/4 cup finely chopped parsley
4 cloves garlic, minced
1/4 cup melted butter butter
Salt and pepper
Directions:
Preheat oven to 200 C (400 F) and spray a baking tray or sheet with non-sticking cooking oil spray. Cut the zucchini halves, cut side up on the baking sheet and set aside. Next, mix together the breadcrumbs, parmesan cheese, garlic and parsley in a small bowl, Then, pour the melted butter in, seasoning with 3/4 teaspoon of salts and pepper to taste. Mix the ingredients together for around 30 seconds, until the crumbs absorb the butter. Spoon the mixture over the zucchini halves and cover evenly. Spray the topping with some cooking oil spray. Bake for 20 minutes in the oven until the zucchini halves are thoroughly cooked and the crust is golden. Broil for 5 minutes more on medium heat. Finally, garnish with parsley and serve.
