Sweet Potatoes Vegan Brownie
Enjoy these rich and fudgy sweet potato brownies, made with simple, plant-based ingredients. A healthier twist on a classic treat, perfect to enjoy with a glass of juice!
INGREDIENTS
• 250 g sweet potato pulp
• 90 g all-purpose flour
• 25 g cocoa powder
• 4 g baking powder
• 20 g dark chocolate chips
• 40 g brown sugar
• 80 g unsweetened almond vegetable drink
INSTRUCTIONS
Begin by steaming the sweet potatoes until tender. Once cooked, allow them to cool, then clean and peel them. Take the required amount for the recipe and blend them with brown sugar and almond vegetable drink using a blender.
In a separate bowl, combine all the dry ingredients by sifting the flour, cocoa powder, and baking powder. Add the sweet potato mixture to the dry ingredients and blend thoroughly with a spatula.
Preheat the oven to 175°C in static mode. Line a 20×20 square baking pan with parchment paper. Pour the batter into the prepared pan and smooth it with a damp spatula. Sprinkle the dark chocolate chips evenly over the top.
Bake in the preheated oven for 30-35 minutes, checking for doneness after 25 minutes by inserting a toothpick into the center. Once cooked, allow the brownies to cool in the pan on a wire rack. Then, remove from the pan and cut into squares.
