Okra with Oil and Spices
Ingredients
- 250 gr organic okra
- 2 tablespoon oil
- 1 medium organic onion
- 1 inch organic ginger
- 1 green chili
- ¼ teaspoon turmeric powder
- ½ teaspoon kashmiri red chili powder
- 1 teaspoon coriander powder
- ½ teaspoon Garam Masala powder
- 2 tablespoon organic coriander leaves
- salt
Directions
Rinse 250 gr organic okra in water, then wipe them dry and chop them in 1 to 1.5 cm roundels. Heat 2 tablespoon oil in a shallow pan and add ⅓ cup chopped organic onion. Saute them on a low to medium flame till they turn translucent. Add 1 tablespoon heaped chopped organic ginger and 1 sliced green chili. Stir and saute for half a minute. Reduce the flame and then add ¼ tablespoon of turmeric powder, ½ of Kashmiri red chili powder, and 1 of coriander powder. Mix the spice powders very well and add the okra. Stir and mix very well with the rest of the masala and add salt mixing it with the okra. Cover the pan with a lid and cook on a low flame. After 14 to 15 minutes the okra should be tender and done. Add ½ tablespoon garam masala powder and mix very well. Switch off the flame, add 2 tablespoon chopped coriander leaves and mix again. Serve the okra hot or warm.
