Sweet corn and Coconut Milk Chowder
Vegan corn chowder recipe packed with summer flavors! 😎 . It’s sweet, spicy and creamy, and packed with farm-fresh flavors. YUM! 🌿
Ingredients
- 2 tablespoons coconut oil
- 1 onion (medium, diced)
- 2 cloves garlic (minced)
- 2 jalapeño peppers (fresh, seeded and diced, use two if you like more heat)
- 3 cups corn kernels
- 14 ounces full fat coconut milk
- 3 cups water
- pepper
- 1 teaspoon lime zest
- 2 tablespoons fresh lime juice
- 1/2 cup fresh cilantro (minced)
- 3 jalapeños (pickled, sliced into thin rounds)
- 3 tablespoons coconut flakes (unsweetened)
Directions
Add the coconut oil to a large pot. Once the oil is hot, add the onion and sauté. Add the garlic, jalapenos and corn. Cook, stirring often until the vegetables are tender.
Stir in coconut milk and water. Bring to a boil. Reduce heat and simmer until soup is fragrant (about 15-20min). Add salt and pepper to taste. Use an immersion blender or, working in batches, carefully transfer the soup to a high speed blender and puree until smooth.
Return the soup to the pot. Stir in the lime zest and juice. Ladle the soup into individual bowls and garnish with minced cilantro, pickled jalapeño, fresh corn kernels and coconut flakes. Enjoy! :)
