Gluten Free & Vegan Cauliflower Soft Bites
Ingredients:
- 1/2 cauliflower
- 1/2 cup cashew chopped
- Extra virgin olive oil
- Cumin
- Salt & pepper
Method:
Rinse the cauliflower under fresh water, remove leaves and hard stalk at the base.
Cut the whole cauliflower in 4 pieces and place in a pressure cooker with a cup of water and steam for 3 minutes after it starts whistling. If you don’t have a pressure cooker, steam in your preferred way, just enough time to make it tender (check with a fork after 10 minutes).
Preheat your over at 350F or 200C.
Once te cauliflower is steamed, place it in a blender and pulse a few times to break it (this is the base for the cauliflower rice recipe, see here). Set aside
Chopped the cashew and add to the cauliflower.
Add 1/2 TBS cumin, salt & pepper to taste and then 1TBS extra virgin olive oil.
Mix well with a fork and then form little balls to place in a oven tray on oven paper. The mixture will be wet and soft, be ready to dirt your hands a little bit :). Try to make bite size ball as they will be very soft inside and just dry outside.
Cook 20-30 minutes (gently flip half way) or until golden. Let them cook 5 minutes.
