Wholemeal Sandwich with Vegetables

Ingredients

3 wholemeal sandwiches
½ organic onion
1 organic cucumber
3 leaves organic romaine lettuce
½ cup pine nuts
cream cheese
½ tablespoon olive oil
½ teaspoon sea salt
½ teaspoon black pepper

Directions

Cut the onion and cucumber into thin slices. Spread a layer of cream cheese on the slice of wholemeal sandwich, place a leaf of romaine lettuce on top, add the onion and cucumber slices, a handful of pine nuts and season with oil, pepper and salt. Repeat the same process for 2 more layers. Your wholemeal sandwich for a quick and healthy lunch is ready. Enjoy!
