Homemade sauerkraut - easier than you possibly think!!!

Cultured vegetables are an amazing stomach relief system, they can also help with the pain caused by food poisoning. They help with cholesterol (studies shown a reduction of 12 to 20%). There are loads of bacteria which are great for your gut and can even resist antibiotic.

And Guess what? When your guts are full of good bacteria your immune system works spic span! Because it is in the guts that the majority of the immune system is created AWESOME!!!!

Now do you think that this amazing product takes hours to make? NO! Grate 2 carrots, shred a rather small cabbage, 1 tsp dill, 1 tsp fennel seeds. 2 tablespoon salt (the quantity can be between 1 to 3 spoons per Lt of water) half squeezed lemon. We also tried to be rather Creative and added half an Apple. Will let you know!

Procedure: shred the vegetables to your preferred size, you will get some liquid out of it, you can chose to “massage” them to get more liquid. The important thing is to make@sure that the environment is anaerobic which means no air! Therefore Wei you put your veggies in a jar (sterilised) make sure to press them down well. Mix the juice with the amount of water needed to cover the veg and salt as per above. Pour the liquid into the jar and start pushing down. You should ideally keep a whole lead of cabbage to help you keep all the veg down with no air. Put a weight on top of the veg (glass will be great). Cover with a cheese cloth and keep on the counter TOP away from direct sunlight.

Takes 2-3 weeks the its ready to go in the fridge. Bubbles are normal. If needed push the cabbage down to remove all the air. Can keep 6-9 months in the fridge.
